Arugula and Beet Salad

This salad makes every day better… I’ve been eating variations of it for lunch most days, and still haven’t gotten sick of it (knock on wood). I usually eat it as a “side salad” and have a chicken sausage with it. To me, it’s a winter salad because of the beets and hearts of palms; However, it’s so good that it might transform into my spring, summer, fall, and winter salad. Enjoy!

Arugula and Beet Salad

Ingredients:

  • Arugula
  • Baby Beets
  • Hearts of Palm
  • Goat Cheese Gouda or just regular Goat Cheese
  • Orange Flavored Cranberries
  • Sweet and Spicy Pecans
  • Shredded Cabbage (optional, and not pictured)

*Note: All these ingredients are purchased from Trader Joe’s, with the exception of the pecans, which are homemade. Additionally, I don’t measure much, so add as much or as little as you’d like of each ingredient.

Directions:

Throw as much arugula that you’d like in a bowl (and cabbage if you’re adding that to it as well)

Dice one beet, one heart of palm, and as much goat cheese gouda as you’d like, and put on top of the arugula bed

Top with cranberries and pecans

Put on your dressing — I use cranberry, walnut, and gorgonzola dressing from TJ’s, but most vinaigrette’s should work

Toss salad and serve immediately

Pesto Chicken Pizza

Pesto Chicken Pizza | Tidbits for Today

If you follow me on Instagram, you may have picked up on the fact that we eat pizza pretty much every Friday. Since the wedding and getting some new tools for the kitchen (mixer, pizza stone, pizza peel), I’m loving trying new pizza combinations. This pesto chicken pizza was so delicious, I couldn’t not share!

Pesto Chicken Pizza

Ingredients:

  • Homemade or store-bought dough <— I just use regular flour for my homemade dough, but I like this recipe because it has a little bit more water than others I’ve tried.
  • Pesto
  • Mozzarella Ball
  • Diced Rotisserie Chicken
  • Parmesan Cheese

Directions:

Preheat oven to 425, and place pizza stone in the oven as it heats up.

Sprinkle corn meal on to pizza peel.

Roll out or toss pizza dough in air to form a circle the size of your pizza peel or a little bit smaller.  If it ends up being a little larger, that’s ok, just means more of a crust edge.

Transfer dough onto pizza peel.

Spread about 1 TBS (or a little more) of pesto onto dough, covering the dough with a thin layer.

Next, put the diced rotisserie chicken on top of the pesto.

Place mozzarella over top of pesto & chicken. Don’t worry about covering every inch of the pizza if you are using mozzarella ball slices, because the cheese will melt down and cover the whole surface. If you are using shredded mozzarella cheese, then cover it all.

Bake for 12-16 minutes, depending on how brown you like your cheese and crust. We like ours on the more cooked side, so we leave it in closer to 16 minutes.

Take pizza out of oven on the pizza peel and let cool for at least 5 minutes. This helps it to set, and it wont burn your mouth when you take a bite <— muy importante!

A great weekend and a meal plan.

Welp, the weekend is now behind us, and ours was really productive! I’m glad we got some house stuff done with the start of the new year.

FRIDAY

Homemade Pizza | Tidbits for Today

We had work, then came home to make homemade pizza, watch football (him) and blog (her). I love cooking/baking, and making pizza on Fridays has become a fun tradition in our house. The dough I made this time was awesome, and instead of using my mixer I did it in a bowl. I actually really liked making it in the bowl, and felt like the dough had a great consistency. While the husband watched the cotton bowl, I drank some wine, blogged, and slept! It’s really hard to stay awake past 11pm most nights.

SATURDAY

We did stuff around the house after sleeping in until 930am! I had to drop off stuff at UPS and pick up a few groceries at Harris Teeter. Later in the day, we had a baby shower, which I used this awesome wrapping paper for! I found this at Marshall’s and I love it.

After the shower, we had a crazy night…. I kid, I worked on our 2nd bedroom. I spent about 5 hours total this weekend going through our 2nd bedroom that was full of old paperwork, bins of who knows what, and just stuff that needed to be purged, which I completed Saturday evening. I started a new box for goodwill, organized our paperwork into filing bins, and the room looks 1 million times better in my opinion.

While finishing the 2nd bedroom, I watched the documentary knife over forks. It was interesting… I find food theories hard though because you can find research that backs up both those who say you should eat meat and those who say you shouldn’t… what is the right way? No idea, but I think you should eat what makes you feel best.

SUNDAY

I also put away our Christmas decorations, and while doing that, reorganized our closet by getting rid of shoes boxes I had kept, so now my shoes are just on shelves vs. in the boxes. Our fridge also stopped producing water on Tuesday, and yesterday we had a technician come look at it. He informed us that a pipe was frozen underneath the fridge, so we could either take everything out of the fridge, turn it off, and let it thaw (free) or have them do something to fix it ($200). We opted for the free route, which took about 10 hours total, and the water is now dispensing again! The bonus, we got to do a deep fridge cleaning! A nice way to start off the year :)

The rest of Sunday was split an order of hunan chicken + dumplings for dinner, and hung around watching football.

I’m trying to start grocery shopping in the middle of the week, which I think will also in turn leave us more prepared for weekend eating. This was our first week, and so far it went well. Here’s what we planned to eat Thursday – Wednesday:

Man, what a two weeks. I was off work for about 10 days, including the weekends… and it was glorious to have a long break! I’ve been back at work two days, and after that long break, I feel motivated and inspired to be back at work. Isn’t that what vacations are for?!

How was your new years? Our was extremely low-key… we ordered Outback for dinner, watched the movie flight, and then a Happy Endings marathon until the ball dropped. Did you ever watch Happy Endings? It’s really the best/funniest show ever, and for some reason they took it off air! Such a travesty :( Did you decide to do resolutions? I didn’t and think I’m just going to enjoy life as is, and keep working on things I worked on in 2013, like less time on social media and being present.

Food:

NEW years food

1. New Years Day meal at our house – our first holiday at the new place! I made roasted pork, sauerkraut, my grandma’s Czech bread dumplings, roasted broccoli, applesauce, and lots of desserts! <— grandma’s dumplings are the absolute best and my family loves them. I made two loaves and we probably could have had 5 loaves 2. Challah french toast + bacon 3. Champagne with raspberries at midnight on NYE.

Workouts:

Saturday: yoga – Sunday: nothing – Monday:  elliptical – Tuesday: strength training – Wednesday: nothing – Thursday: nothing – Friday: 5 minute warm-up on elliptical, 45-ish minutes of weights

I feel meh about the workouts this week. I’m looking forward to getting back on track with a normal week coming up. I find it harder to work out when the routine breaks (e.g. new  years in the middle of the week), but trying to keep up with it because it gives me energy and makes me feel better overall.  Good thing there is always a new day tomorrow :)

The Week of Christmas.

Hello, friends! Hope you had a great week with your loved ones. Ours was amazing and special with it being our first married Christmas.

Monday

Got up early and went to the gym. I ellipticaled (new word) which is my usual Monday-I-don’t-feel-like-working-out workout and did some reading! Reading a good book seems to make the elliptical fly by. Then I headed into work for my last working day of 2013! Once off work, I headed to the grocery store, and home to relax and bake.

Baking | Tidbits for Today

Bake bake bake with butter & my new mixer. I love that mixer, so handy if you bake or cook a lot!

Cookies | Tidbits for Today

I baked chocolate chip peppermint cookies & sugar cookies, and both turned out really well.  I finished up the night making ziti with sausage for dinner, and hanging out with the husband.

Tuesday

Woke up earlyish – around 8, and went to boot camp at the gym, then ran a few last minute errands with Tim.

Christmas Eve | Tidbits for Today

We got ready for Christmas Eve dinner at BIL & SIL’s house. The meal started with spinach artichoke dip and vegetables, then the main course was gumbo, salad, and cornbread, all very delicious!

After dinner we exchanged gifts with the everyone, and had a great time watching the little kids open gifts! We got two new ornaments from my SIL and I love them!

Peppermint Bark Martinis | Tidbits for Today

We were home around 10pm and made peppermint bark martinis & watched Christmas Story on TV.

Wednesday

Christmas morning! We woke up + opened gifts/stockings. Tim got me a new nook for reading, shirt, a workout DVD, and some other little stuff. I got Tim a book, XL whiskey ice cub tray, brown leather gloves, and a water bottle!

Once we opened gifts, I made french toast with challah, bacon and mimosas! After hanging around, we got ready, and headed out to my parents house for the rest of the day.

We opened gifts with my family, had a roast beef dinner, and watched a movie. Perfect ending to Christmas day!  Hung out with my family, had beef dinner & dessert. Watched movie in basement then headed home.

Thursday

Woke up to our couch being delivered!! BEST DAY EVER… We’ve been waiting 4 weeks without a couch, so to say we’re happy it’s here is an understatement!

A tradition we have with Tim’s grandpa is getting sushi when he is in town! We headed to a local sushi buffet for lunch with grandpa, Tim’s aunt, mom, SIL and nieces. I loooove sushi, so I thoroughly enjoyed lunch! After lunch, we headed to the mall to do some shopping. I ended up with a white Michael Kors coat at Macys, and Tim got a coat from Macys as well. The rest of the day we just hung around.

Friday

I had a good day off work, went to the gym and shopping (new chair, bar tray, and lamp!), and then got ready for a big night out with my mom and sisters!

My mom surprised all of us with tickets to the Nutcracker at the Warner Theater! She first took us to Chef Geoff’s for apps and drinks, then we headed to the theater! It was an amazing production, and such a great night with my mom and sisters!

Saturday

Lazy day at home with 40 minutes of the Bethenny yoga dvd and homemade pizza of course! p.s. this pizza was insanely good! plan to post this recipe soon!

Sunday

We did a lot around the house, and then got ready to celebrate Tim’s grandpas 91st birthday! We went to an amazing restaurant called Trummer’s on Main and had a wonderful meal with Tim’s family! It was great to celebrate his grandpa, and we’re so thankful to have him in our lives.

It was a great Christmas week, and now we’re ready for NYE! Hope you have a safe and fun night!

Happy (almost) weekend!

The last weekend before Christmas is here! Are you ready? We are very close, just waiting for two more packages. I did a lot of wrapping this week, so almost done with that too. I love wrapping, and enjoy taking my time to meticulously wrap and add some bows/ribbon to each gift. This weekend isn’t too crazy busy…Friday is lazy movie/pizza night, Saturday is errands & best friend’s holiday party, then Sunday is babysitting one niece and nephew.

Wedding Day Kiss | Tidbits for Today

We also got our wedding video back this week… waterworks! It really was the best day ever & marrying the best guy ever doesn’t hurt! So thankful we got the video, because I’ve watched it at least 5 times in the past 4 days, and just love seeing our special day!

Saturday: nothing – Sunday: nothing – Monday: elliptical for 35 mins – Tuesday: strength training – Wednesday: nothing – *Thursday: Strength training in the AM & yoga in the PM – Friday: Elliptical for 30 minutes

*I don’t normally do two workouts, but I’ve been trying to get in yoga twice a week, and I really wanted a flow class. Turns out the hubby had a late work event, the gym had flow yoga, and I wanted to relax/decompress from the day.. so I went. It was a great class and not overall really difficult, perfect ending to the day!
