Hi there and Happy New Year to you! I know I’m a tad bit late on that, but better late than never
HOpe your new year is going smashingly! Mine has so far. Let’s get into what I ate yesterday.

[breakfast] two eggs fried over arugula with two pieces of turkey bacon, grapefruit, and coffee. (side note: if you haven’t tried runny eggs over arugula, please do. it’s amazeballs)

[lunch] mixed greens, rotisserie chicken, goat cheese, tomatoes, avocado, with a homemade honey dijon dressing.
[snacks] two clementines, an apple (unpictured: carrots, hummus, and 9 mini tootsie rolls)

[dinner] Skinny Taste Crockpot Chicken Enchilada Soup with cheddar cheese sprinkled on top. <—muy bueno!!

[dessert] worlds smallest ice cream cone from Trader Joe’s! A perfect little treat
SO! that’s what I had to eat yesterday… it was a great day of foods, in my opinion.

That is a super tiny ice cream cone! I love, love, love homemade honey dijon salad dressing. It’s actually what I put on my salad most of the time. I’m not sure if I”\’ve ever had arugula before but runny eggs sounds like a good way to try it.
Yes, it really is bite size. Love that dressing too, and it’s great being able to make it! Please do try the eggs and arugula!
THAT ICE CREAM! SOOOOOOO CUTE! Back in the Philippines, they used to have “finger ice cream”. They were super mini ice creams, with cones that have an opening for your fingers – so you could have ice cream fingers!!
