dinner:  [us] monday, crockpot pork carnitas; tuesday, leftovers; wednesday, stuffed shells; thursday, leftovers; friday, naan pizza

yum! lots of good food this week, per usual. life is too short to eat bad food :)

Bragging [Running News]

Hola! How’s your day/night going? Mine is going really well! I had a great day at work, it was both busy and productive, and a great run and meal after work.

Do you ever feel like some days you just getting the running bug? That was me today. I kept seeing the sun shining from my desk, and I knew I had to get out there! By the time I was ready to run, it was 6:05pm and the sun had set, so it was quite cold!

Despite the cold cold cold wind, I still had a great run! And the best part, my knee held up for over 3 miles! This hasn’t happened in over a year… I am on cloud nine :)

I then made dinner from leftover turkey meatballs… it was called a makeshift meatball sub ( I mean very  makeshift).

Toasted piece of bread, mozzarella cheese, slice of tomato, sliced turkey meatballs, mozzarella cheese on top (x2)! It was really good!

The [Long] Weekend Update

Hello to you! How was your weekend + Presidents Day? We had a great last few days, with a lot of productivity and relaxation! Let’s get into some Marvelous in my Monday hosted by Katie!

[thursday]

We had a very low key Valentines Day, but did give each other cards, and I got roses and homemade chocolate covered strawberries!

[friday]

I had really ambitious plans to get to the gym that night, but the weather was amazing and coworkers wanted to go to happy hour at 4pm… I couldn’t resist! :) Had two glasses of wine, then headed home to grab dinner. At about 9pm, met my love out in Clarendon (he had been at a work happy hour as well). We stayed out until around midnight, but went home to hit the hay!

[saturday]

After being up kind of late, we slept in and lounged around until it was time to head to my parents house to help out. They are in the process of getting their house ready to sell, so we were chipping in to get things done! Tulips I got my mom for V-Day, they were quite beautiful!

I got to spend time with the nephew which was priceless :)

Later that day, hubs-to-be and I headed to Melting Pot for our Valentines Day celebration!

We did the four course valentines day special, and it was awesome!!

[the cheese course] We did the fiesta cheese which comes with veggies, bread, apples, and tortilla chips.

[the salad course] I got the California which was mixed greens, candied walnuts, gorgonzola cheese, and a vinaigrette dressing.

[the meat course] We got the cupid’s special which came with lobster tail (!!!!), filet mignon, angus steak, teriyaki steak, shrimp, and chicken… and unlimited vegetables!

[the dessert course] I would be lying if I said this wasn’t my favorite course… we got a ‘turtle’ chocolate dip which had chocolate (obvi), caramel, and nuts. Then to dip in it, we had strawberries, banana, rice krispies, pound cake, and cheese cake… it was heavenly!

Overall, dinner was amazing!! We were tucked back in a two-person booth and it was quite romantic ;)

[sunday + monday] sunday we spent working out, running errands and hanging with family! Monday I had coffee with my best friend, lunch with my love, and did a LOT of cleaning and rearranging! I’m loving our new set up in the apartment!

Time for bed, since it’s back to work tomorrow! Hope you had a great last few days! :)

WIAW [What I Ate Wednesday]: 2.13.2013

Good morning and happy Wednesday! Is it just me or is this week going soooo slow? But on the other hand, 3 day weekend coming up! :)

I’m excited to share what I’ve been eating, you’ll notice that some things have changed while others are still the same!

Peas and Crayons

[breakfast] coffee with cream/sugar, grapefruit, 2 eggs over the baby spinach blend, and three pieces of turkey bacon

[pre-lunch snack] 2 clementines

[lunch] went to a restaurant called Honey Pig, essentially Korean BBQ. We shared beef brisket and pork belly, along with rice, salad, and some other sides.

[dinner] leftover salad scooped up from work, which had mixed greens, cranberries, blue cheese, pumpkin seeds, almonds, walnuts, and balsamic dressing. Also had a little bit of pasta with meat sauce and zucchini

Friday & Pizza

Hey friends & happy weekend to you :) How’s your week been? Mine went well, pretty busy at work so the week flew by! Once leaving work, the hubs-to-be and I headed to the gym… Friday night gym sess. —> nothing cooler, right? I did some of the GPP workout today, but tweaked it slightly, then jumped on the treadmill for a mile. Then we made naan pizza!

For one piece of naan, it was 7 WW points. The naan was from TJ’s and is a perfect personal size (4 pieces come in a pack). On my two pieces was tomato marinara, cherry tomatoes, orange peppers, roasted brussels sprouts, and goat cheese. Muy bueno! I ended up eating both my pieces… it’s hard to resist any type of pizza.

In other news, at work daily I’ve been keeping a little white board with the date and when I get into work, I find a inspirational quote for the day. It’s a really nice activity to do first thing in the morning, and helps get the day going on a positive note. Here’s the quote for today, which I saw Tina from Carrots ‘n Cake post on her instagram feed. I loved it, so made it my quote for the day:

WIAW [What I Ate Wednesday]: 12.12.2012

Friends! How are you? I’m doing okay, actually already snuggled up in bed (jeez I am an old woman.. it’s 8:05pm…) and it has been a long day. Work is getting busy and I’m just feeling blah, I think it’s the holidays, ya know, the time of year that is supposed to be so jolly. It’s stressing me out! I did get some holiday cards done for us… yay one thing done :)

What I Ate Wednesday Healthy Holiday Recipes

This is from todays eats, mostly good, and let me say that I am loving holiday foods! Specially the cookies I made last night, but don’t you worry, I did share them with work!

[breakfast] trader joe’s apple chicken sausage with two eggs mixed in and some cheddar cheese, and a clementine

[lunch] hot food bar from work! I had lots of little things, including a big pile of salad, with some fixings. Then I add a bunch of protein, usually chicken, some beef, and some pork (I do little scoops of each). Lastly, I add veggies of some sort… usually works out great, as it did today! Ohhh, plus a no bake cookie!

Weekend Update & Delicious Recipe

Hey friends! How is your week going? Mine is going well!

This past weekend was a bit crazy, and somewhat started unofficially on Thursday with my work holiday party, which lasted until about 1am! We have such a great group of people that events always go a bit late. The lighting on this pic was cray cray, but you get the idea (Dress from Loft).

That Friday I worked and then ran around like a crazy person trying to get ready for a white elephant party we had that night! I had to wrap gifts, go to the grocery store, make buffalo chicken dip, and shower/get ready. Well with the fiancé’s help, we did get it all done, but got the party about an hour late, which ended up being fine. It was a great party, with lots of delicious food and great company! After the house party, we headed to a bar for the rest of the night, which was a great time!

The rest of the weekend was spent seeing movies (Argo was great!), eat pho, and doing errands, etc!

Okay, onto a delicious dish I made on Sunday for dinner this week.

Noodleless Zucchini Lasagna

I started off with this recipe: http://www.chow.com/recipes/30280-noodleless-zucchini-lasagna, but had some modifications. But… this is delicious, and I don’t miss the noodles one bit!

Here is how I made the recipe:

INGREDIENTS

1 jar of spaghetti sauce

1 lb of ground turkey meat

1 lb of cottage cheese

1 1/2 cups of mozzarella cheese

1 cup of parmesan cheese

1/2 of red onion chopped

1 package of cremini mushrooms sliced into 1/2 inch pieces

5 medium sized zucchini

1 lb of frozen artichokes chopped

olive oil

s/p

lawry’s seasoning

STEPS

[step 1] preheat oven to 375

[step 2] slice long strips of zucchini and place on pam sprayed cookie sheet, sprinkle with lawrys, and bake for 15 minutes, or until zucchini starts is roasted

[step 3] while the zucchini is cooking, pour in a little bit of OO and start to brown onions in a sauté pan, then add turkey meat and cook thoroughly

[step 4] add jar of spaghetti sauce to onion and turkey meat mixture, set aside

[step 5] in a large pan, sauté mushrooms in OO with s/p until soft, then set aside and cook chopped artichokes for 4-6 minutes, adding to mushrooms once done

[step 6] mix cottage cheese with parmesan cheese, and s/p

[step 7] add 1 1/2 cups of sauce mixture to mushroom/artichoke mixture

[step 8] spread the remaining turkey sauce mixture on the bottom of the pan, and add a layer of artichoke/mushroom mixture, then zucchini, a layer of cottage cheese, and sprinkle of mozzarella

[step 9] make one more layer of artichoke/mushroom mixture, zucchini, cottage cheese, mozzarella

[step 10] take the remaining zucchini and put as a layer on top, then cover with mozzarella

[step 11] bake for 40 minutes, and let it SIT for at least 30 minutes

[step 12] mangia mangia!
